za’atar lemon grilled chicken
If I had to live with just one spice in my kitchen cabinet, it has got to be za’atar. Don’t get me wrong, I love all spices and it would be a tough choice to make, but za’atar has always been my favorite. Za’atar is a Middle Eastern spice made out of a combination of dried thyme, oregano, marjoram, sesame seeds and often other spices. Extremely flavorful, this spice is used to season all sorts of meals–from vegetables and salads to fish and chicken–making it a very handy ingredient to have on hand. Although there are a zillion ways to marinate chicken prior to grilling, this lemon-za’atar combination has got to be my favorite. It’s packed with flavor, zesty, aromatic and so addictive that my toddler loves it too!
- 4 chicken breasts
- 1 big garlic clove, minced
- Zest and juice of 1 lemon
- 1 ½ tablespoons olive oil
- ½ tablespoon za’atar
- 1 teaspoon dried parsley
- Salt and pepper, to taste
- Pound the chicken breast until thin. Place in a dish.
- In a small bowl, combine all the remaining ingredients. Pour the marinade over the chicken and let marinate for minimum 1 hour in the fridge.
- Heat grilling pan over medium-high heat. Grill the chicken on one side for about 5-7 minutes, then flip and cook on the other side for another 5-7 minutes or until cooked through.
I’m definitely curious because I’ve never tried za’atar before but have heard that it tastes great and smells even better. I’m definitely going to give it a try.
It does smell delicious and brings so so much flavor to a dish!
