I am generally not one to follow cooking trends. I like to do my own thing in the kitchen, see where my inspiration leads me and make up my dishes as I go along. I’ve been seeing lots of recipes for smoothies on the food blogosphere lately, and to be honest, I never understood the craze behind it. Why mush fruits when you can have them raw in their true, delicious state? I finally caved in last weekend and decided to give smoothies the benefit of the doubt, especially since I was looking for ways to boost my metabolism and my Vitamin C intake. It’s been so cold here in Geneva, and with everyone getting so sick I needed to find a way to flight the flu. This raspberry banana smoothie kept me going this week and fuelled my body with energy and lots of vitamins. And the truth be told, I LOVED IT. Do I now understand the smoothie craze? Yes, I totally do.
What I really love about this smoothie is its rich, pink color which helped me begin my days on a very bright note! The banana goes wonderfully well with the sweet and sour taste of raspberry, toning it down just a notch to make this smoothie more sweet than sour. I also included 2 teaspoons of granulated sugar to make it sweeter (yes, I have SUCH a sweet tooth as you know), and a cupful of milk to thin it all. It’s not a vegan recipe, but you can make it dairy-free by substituting the milk for almond milk. I chose to combine raspberry with banana, because it’s one of my favorite fruits and gives this smoothie a wonderful, thick texture. The result was an energy-boosting smoothie full of flavor and texture, but most of all one that made me change my mind about this drink all together. - 1 ripe banana, cut in slices
- 0.5 pound (250g) raspberries
- 2 teaspoons sugar
- ½ teaspoon vanilla extract
- In a blender, combine milk, banana, raspberries, sugar and vanilla extract. Pulse to blend until well combined, about 1 minute. Add more milk if you like a thinner consistency.
