strawberry mint smoothie
I attended a cooking demonstration using the new Thermomix at a friend’s house last week and was so happy to discover that our first recipe was for a smoothie. I’ve been in smoothie heaven ever since I made this raspberry banana smoothie and was so excited to discover a new recipe. I don’t own a Thermomix myself, but here in Switzerland when you buy one a professional comes to your home and demonstrates how to use all of its cool features. My friend has just received one and invited a couple of girlfriends to take part in the demonstration. I have to admit that I don’t own many funky kitchen appliances. All I have is a food processor, a blender, a handheld blender and a handheld mixer, and that’s good enough for me! I really enjoy cooking myself, doing all the prepping, cutting and mixing traditionally by hand rather than letting technology take over. However, I hadn’t seen my friend in a while and was really excited to spend a girl’s night together while getting inspired to create a bunch of new recipes, such as this strawberry mint smoothie.
The process to make this strawberry mint smoothie is pretty much the same whether you’re using a traditional blender or the Thermomix, as both blend the ingredients together until liquified. The Thermomix’s greatest difference is when you’re using it to cook or steam ingredients, but as we began with a smoothie recipe I didn’t witness any of its cooking features until later in the evening.
This strawberry mint smoothie is so easy to whip up in the morning right before leaving to work or can be prepared the night before as well. I tend to make a batch on Sunday night and drink a glass the next morning with my breakfast. I end up taking the rest to work with me to fuel my body with vitamins during the day.
It took me a while to come up with a proper name for this recipe before posting it, because the truth is that strawberry mint smoothie doesn’t do it justice. There are other incredible ingredients blended together besides strawberries and a handful of mint, such as orange juice, pear, a very ripe banana and a spoonful of granulated sugar. The banana and pear give the smoothie a creamy texture while the sugar increases the smoothie’s sweetness. The orange juice not only gives the smoothie a zestier taste, but also makes it dairy-free and less caloric. I never thought about including mint in a smoothie until our Thermomix demonstration, but the result was as amazing as it was refreshing, making this smoothie the perfect way to be fully energized and ready for a crazy morning at work.
- 1 ½ cups orange juice
- 300g strawberries, leaves removed
- 1 pear, cored, skin on
- handful of mint
- 1 ripe banana, chopped
- 1 tablespoon granulated sugar
- Combine all of the ingredients in a blender and pulse to blend until well combined, about 1 minute. Serve in glasses.
